Mother's Day tip - Vega banana pancakes
Super tasty (we think) and super easy and quick to make. Too good to serve as Mother's Day breakfast or brunch only once a year!
Pancake ingredients
- 1 (organic) banana
- 2 eggs (preferably organic)
- 1 tsp (tartaric acid) baking powder
- 1 tablespoon rice flour (or spelled flour or other flour)
- Cinnamon
- Vanilla powder or essence
- Pinch (Grey Sea - or Himalayan) salt
Toppings - some examples
- Coconut butter (or butter if you don't want vegan)
- Blueberries
- Grated apple + piece of grated ginger - gently stewed
- Sliced banana
- Grated coconut
- Walnuts in pieces
- Cinnamon, ginger powder
- Extra sweet? - Maple syrup or jam
Preparation
- Mash the banana
- Separate the eggs - the whites in a separate bowl, the egg yolks with the banana mash
- Add the other ingredients for the pancakes to the banana mash
- Beat the egg whites until stiff
- Briefly mix the banana mash mixture until smooth
- Gently fold the egg whites into the banana mash mix
- Always pour three pancakes of cira 10 cm in diameter into a pan.
- Fry them on both sides until golden yellow (don't turn too quickly or the dough will spread)
- Keep them warm until use.
Serving tip
Put different toppings in bowls on the table. So that everyone can choose their favorite topping.
My favourite: The pancakes smeared with some (coconut) butter. And topped with stewed apple/ginger + chopped walnuts + extra cinnamon & ginger powder. Sometimes I add grated coconut.
